This fluffy egg white loaf is light, airy, and slightly sweet — almost like a soft, cloud-like meringue you can slice. It’s surprisingly easy to make and uses just a few basic ingredients. The texture is soft and spongey, and it pairs well with both sweet and savory toppings. Ingredients
- 3 large egg whites
- 2–3 tablespoons sugar (28–42g)
- Pinch of salt (optional)
- Food coloring (optional)

Instructions
- Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Separate the egg whites from the yolks and place the whites into a clean, dry mixing bowl. Any grease or moisture will prevent proper whipping.
- Beat the egg whites on medium speed until they become frothy.
- With the mixer still running, gradually add the sugar, allowing each addition to dissolve before adding more.
- Increase the speed to high and whip for 2–3 minutes, or until stiff, glossy peaks form and the mixture is thick and shaving-cream-like.
- If you want colored cloud bread, add 1–2 drops of food coloring and gently fold it in with a spatula.
- Transfer the whipped egg whites to your prepared baking sheet and shape into a loaf or oval using a spatula. Keep the height even for best baking.
- Bake for 35–45 minutes, or until lightly golden on the outside and a wooden skewer inserted into the center comes out clean.
- Let the loaf cool completely before slicing with a serrated knife — or tear pieces off and enjoy.

Notes
- For a slightly firmer structure, you can add 1 tablespoon of cornstarch (10g) after the sugar. Sift it in, then mix briefly to combine.
- Without cornstarch, the loaf will still be fluffy — just a little more delicate and airy.
- A tiny pinch of salt or a few drops of lemon juice can help stabilize the whip, but both are optional.
- Make sure your mixing bowl and beaters are completely clean and grease-free, or the egg whites won’t whip properly.
- For a fun twist, you can add a drop or two of food coloring to the whipped egg whites before shaping the loaf. Pastel colors work especially well for cloud bread.
- Mix gently with a spatula to avoid deflating the meringue.
- You can replace the sugar with 1–1½ tablespoons of honey. Because honey is heavier and adds moisture, the loaf will still whip up fluffy but may bake slightly softer.
- Add the honey after the egg whites reach soft peaks, not at the beginning, so it incorporates smoothly without deflating the mixture.
